Sure doesn't look like he wants to run cat back. He wants to cut out the resonator.
If he cuts out the resonator, and keeps the cats in place, that would be considered a cat-back system.
If you keep stock pipe size, keep your resonator. It helps keep the sound cleaner and kills off some rasp. If you increase the pipe size, consider running a new resonator as well. If not, with 2 flowmasters out back, you shouldnt have to worry about it being too loud at all, granted you still have all of your catalytic converters on there.
