I bought my car used and it didn't have the manual with it. Where do I find the adjustment for the power adjustable pedals?

It should be on the left side of the driver's seat.
The adjustable pedals are awesome btw.

my 2001 also has the pedal switch behind the power seat controls on the outboard side of the driver's seat

but apparently, some years had/have the switch near the instruments on the dash (I think it was near where the traction control switch is if you have that option), but you'd probably have noticed that already......

You might not have the adjustable pedals. They weren't standard.

It's a switch near the power seat controls on the drivers seat. It looks like a power lumbar switch. In late 2002 they swtiched it to the instrument panel.
