Today when I was driving the car, and I'd come to a stop, the car would idle wierd, either it would be low at 600 rpms or around 750-850, with the needle moving up and down slightly. The car normally idles at about 750 rpms.

There isn't any problem driving or stopping, except when I accelerate from a stop the car kinda 'hiccups' for half a second and goes normally again. What could this be?

It's hard to say exactly what it is, but it could be "tune up" time. New spark plugs/wires, clean out your throttle body - could be carbon build up. You could try those things and see if it still does it. They are cheap and should be done once in a while anyways.
