So my wife's 99 SE has the stock 205/65/15's on it. Fronts are like new, rears need replacing. I as thinking of doing a plus 1 and going with 215/60/15's, but will this cause the car to handle badly? Should I just get the stock size and be done with it?

Since you're only getting 2 tires, get the stock size. The Taurus is a FWD car, so there's no point in having the rear tires wider than the fronts. If you were getting all 4, then I might suggest trying a wider tire for better handling. Here's a tire size calculator to show you what size you could get to match the stock diameter.
