I have a Gen 1 with bad AC, and its gonna cost about $800 to fix (no way in heck). Would it be possible to find say...a 95 from a junkyard, take out its whole AC system, and put it into my car?

Yeah, just find one with the same motor as your car. '91s are very similar in the engine bay as G2s.
