Because that is the only way to accurately calibrate the MAF in a tune.

Is the actual sensor different entirely, or is it that it'll meter the air at a different ratio than a smaller diameter MAF?

UPDATE: I got the composite UIM and 'tec TB and MAF on yesterday. I cut out the brace from my vulcan's MAF last spring (with no issues) and looking at them side-by-side, they probably flow about the same amount of air, maybe even less for the duratec. It idles a bit high, but other than that, no problems. I'll post pics later, and maybe a vid if i can find a videocam.

Odd... If everything is sealed up correctly, it should idle the same as stock.

While bolting everything together, the TB looked to have some sort of air passage on it behind the throttle plate that flows air in from outside the TB. Is this supposed to be there? Should I plug it up with something? I thought unmetered air was bad, and it might explain the high idle.
