Funny you mention getting leather from a Sable. My Sable that was totaled a while back was black and had medium graphite leather seats and no center shifter. It would've been an ideal candidate for the swap you're looking to do. But, of course, I have no idea where it's at now.
I'm interested in seeing how you install the curtains you were talking about.

They look like higher quality seats than what's in my Taurus. Did they do a better leather option?

I'm not sure what type of sable it was but it had every option except Mach audio

Well those seats did come from an 04 or 05 sable so it well could be sable platinum. Since it didn't have mach audio though it probably wasn't, just a LS with leather upgraded.

I stripped that car down to nothin lol. I took the door panels, seats, all the plastic interior trim... Basically everything except carpet
